1 large or 2 small ducks
1 tsp peanut oil
3/4 cup bacon pieces
1 cup diced onions
1/2 tsp pepper relish
1 can tomatoes
4 Tbsp flour
4 cups hot water
1 tsp seasoned salt
1 cup chopped green onions
1 pound smoked link sausage
1 cup chopped parsley
3 tsp chili powder
1 tsp mustard powder
1 tsp white pepper
1 cup shrimp and / or oysters

Directions:
Cook bacon, onion and flour to desired color. Add water and seasonings. Add duck; boil for 1 hour. (duck can be used whole or deboned). Cut sausages in small pieces and add to mixture. If desired, add tomatoes, shrimp, oysters. Cook another 1 1/2 hours and serve over rice.

Chris is always after me to cook his ducks for him. I have never cooked duck. I got this recipe from Mama Judice so that Chris can one day have a recipe to cook his ducks.
