1 lb ground beef
1 small onion, diced
1 clove garlic, minced
1 package taco seasoning
1 (16 oz) frozen Mexican corn
1 can black beans, rinsed
1 (12 oz) package shredded cheddar cheese
2 cans mild enchilada sauce
1 can diced tomatoes
1 small can sliced black olives
1 (16 oz) package frozen tater tots



Directions:
Directions:
Spray a 9 by 13 inch pan, preheat oven to 375. Cook beef and onion, drain, add garlic, taco seasoning, diced tomatoes, corn and black beans, cook 10 minutes. Add tater tots, olives, 3/4 cup cheese, stir, remove from heat. Pour 1 can of sauce into baking pan and pour skillet contents over that, pour 2nd can of sauce on top. Bake for 40 minutes. Top with remaining cheese, bake 5-10 more minutes, let it sit for at least 5 minutes before serving.
