c butter
1 pkg cream cheese, softened
1 egg
1 tsp vanilla
1 lemon zest
tsp salt
1 c powdered sugar
1 c flour
1 c graham cracker crumbs
choice of fruit filling

Directions:
Directions:
In medium bowl cream butter, cream cheese, egg yolk, vanilla, 1 tsp lemon zest and salt until fluffy. Gradually mix in powdered sugar and flour to make stiff dough. Cover bowl and chill 2 hours. Remove from fridge and preheat oven to 325. Shape dough into one inch balls. Beat egg whites until foamy. Dip balls into egg white and roll into the crumbs. Place on ungreased pan 2 inches apart. Put a thumbprint in each cookie ball. bake for 12 - 15 minutes. Let cool. Fill with your choice of fruit filling.

Store in fridge.

Freezer friendly.
