1 lb shaved steak (likes steak ums) we use Old Neighborhood brand, or similar
1 box penne pasta
2 small-to-medium yellow onions, sliced thin
1 large red bell pepper, sliced thin
1 large yellow or orange bell pepper, sliced thin
4-5 large cloves of garlic, minced
1 cup half & half or light cream
3 to 4 Tbsp of freshly grated parmesan cheese (depending on your tastes)
1 tsp crushed red pepper flakes

1) Cook the pasta. As the water is boiling, and as the pasta cooks, you can complete step 2 (prepare your veggies). When the pasta is al dente, reserve about 1 cup of the pasta water (set aside) for sauce thickening. Drain the pasta and return the pot to keep it somewhat warm.

2) Cut onions in half and slice relatively thin. Do the same for the bell peppers. Cut green onion/scallions, making sure to include most of the white portion. Mince garlic.

3) Pat the shaved steak dry to remove any excess water or moisture. Season the steak with salt and pepper.

4) In a large nonstick pan, caramelize your onions with 1 Tbsp olive oil. You will be reusing this pan for another step, so make sure it's a large one. Add a little salt to the onions as they cook.Cook until they have a nice caramel color, approx 10-12 mins. When cooked, transfer onions to a plate and keep the pan for the next step. Do not clean the pan. The onion drippings are a good flavor booster!

5) In 5qt or 6qt saute pan (this is even larger than your fry pan used for the onions), add 1 Tbsp of olive oil and cook the seasoned shaved steak. bell peppers, and minced garlic. Cook through until the veggies are no longer crisp, and the meat has not pink showing.

6) Stir your sauteed onions, ½ of the scallions, and ½ of the reserved pasta water into the steak mix. Add a little salt to taste and remove from burner.

7) In the saute pan that was used to cook the onions, add your 1 cup of light cream (or half & half). Bring to a boil. Once boiling, remove from burner and add the parmesan cheese and salt. Stir. Add your pasta (handfuls at a time) and ensure that they are well coated. Generally, you do not need the entire box of pasta. For pasta lovers, you can use the whole box, but you will need to add the remaining pasta water to your "sauce" to ensure that it all covers the pasta. Mix well to coat the pasta evenly.

8) Pour the pasta mixture into the steak and onions pan. Stir well.

9) Garnish with red pepper flakes and remaining scallions/green onions
