1/4 C onions finely chopped
6 TBSP butter
1 tsp flour
1/2 tsp salt
1/4 tsp black pepper
1/2 C water
1 8oz jar cheese wiz
2 10oz packages frozen, chopped broccoli florets
3 eggs beaten
13 round buttery crackers-crushed (1/2 C)

Directions:
Preheat oven to 350 degrees. Grease a shallow 1 qt casserole.
In a medium sauce pan over medium heat, sauté onion in 4 TBSP butter for 2 minutes or until onions are translucent. Reduce heat to medium. Stir in flour, salt and pepper. Add water slowly. Stirring, bring to a boil and boil until thickened. Reduce heat to low. Stir in cheese wiz until well blended. In a medium bowl, combine broccoli, cheese sauce and eggs, mixing well. pour into casserole. Sprinkle with crackers and dot with remaining 2 TBSP butter.
Bake for 45 minutes or until puffed and golden. Let stand at least 5 minutes before serving.

We had this every year growing up for any holiday gathering and it was the first dish I ever took to a pot-luck meal. I think it was a sports banquet and my Mom was out of town. I didn't tell anyone it was mine until it was all gone...was afraid it wouldn't turn out. It's delicious if you love cheese and broccoli...and if you love broccoli you love it with cheese...am I right?!?
My grandmother and aunt didn't do the saucepan step and melt the ingredients together...saves time, still tastes great but it's not my preference...
