Thumbprint Cookies Recipe

½ c. shortening (half butter)
¼ c. brown sugar
1 egg yolk
½ tsp. vanilla
1 c. sifted flour
¼ tsp. salt
3/4 c. nuts, finely chopped
1 egg white

Filling options:
Confectioners sugar icing
Food coloring
Jelly
Candied Fruit, chopped

Directions:
Directions:
Mix shortening, sugar, egg yolk, and vanilla together thoroughly. Sift flour and salt together and stir into creamed mixture. Roll into 1 inch balls. Dip in slightly beaten egg whites. Roll in finely chopped nuts (3/4 cup). Place 1 inch apart on ungreased baking sheet. Bake in 375º oven for 5 minutes. Remove from oven and quickly press thumb gently on top of each cookie. Return to oven and bake for 8 minutes longer. Cool.
Fill each thumbprint in center of each cookie tinted confectioners sugar icing, sparkling jelly or chopped candied fruit.
Makes about 2 dozen 1½ inch cookies.
