Cranberry-Banana Bread Recipe

1 c. all purpose flour
⅔ c. whole wheat flour
tsp. baking soda
tsp ground cinnamon
c. sugar
3 Tbsp canola oil
c. egg substitute
c. cranberries chopped
3 medium bananas, ripe, peeled and mashed (approximately 1 c.)

1. Preheat oven to 350
2. Spray 9x5 loaf pan
3. In a medium bowl, combine both flours, baking soda, cinnamon and salt.
4. In a large bowl, beat sugar and oil with an electric mixer at medium speed until sugar begins to dissolve. About 2 minutes
5. Beat in egg substitute, mashed bananas
6. Stir two mixtures together
7. Stir in cranberries
8. Pour batter into loaf pan
9. Bake bread for 45 minutes to 1 hour or until toothpick is inserted and comes out clean.
