1 cup softened butter
1 cup powdered sugar
1/2 tsp vanilla
1 3/4 cup unsifted flour
1/2 cup finely chopped peacans

Directions:

Preheat oven to 350º

In a medium bowl with electric mixer at medium speed, cream butter and 1/2 cup sugar until light and fluffy. Add vanilla and flour. Continue beating just until well mixed. Stir in nuts. Cover and chill for one hour.

Shape dough into 1 inch balls and place on greased cookie sheet and bake for 15-20 minutes. Let stand on cookie sheet 2 - 3 minutes before removing to wire racks. Roll in remaining sugar.

Cool completely on wire racks then roll in sugar again.

Makes about 3 dozen cookies.

Homemade cookies always take a little time to make but they are always the best. These included. The kids always like to help not only make the cookies but eat them as fast as they came out of the oven. I guess that's why some of them became sugarholics like me.
