1 (10 oz) pkg fresh spinach
3 eggs, beaten
6 Tb flour
1 tsp salt
¼ tsp pepper
Dash onion powder
2 C low fat cottage cheese
2 C grated cheddar cheese

Directions:
Directions:
• Preheat oven to 350°.
• Wash, remove spine and chop spinach.
• Beat eggs and flour until smooth.
• Mix all ingredients together and place into a 2 quart casserole dish.
• Bake uncovered for 1 hour.
• Let stand a few minutes before serving.

Yields: 6-8 servings

A friend of mine gave me this recipe to me when we were in our 20s, before babies came. She prepared it and served it with lasagna. She and I both were crazy about it and almost ate the whole dish after our husband's left the table.
