1 Head cauliflower
2 Large eggs
½ Cup Cheddar Cheese, shredded
½ Cup Panko bread crumbs
½ tsp. Cayenne Pepper
salt
Olive oil

Sour Cream for serving

Directions:
Directions:
Chop cauliflower and boil or steam until very tender, 10-15 minutes. Drain. Mash the cauliflower while still warm. Stir in cheese, eggs, panko, cayenne, and salt to taste.


Cover the bottom of a large skillet with olive oil. Heat to medium/ high heat. Form the cauliflower into patties about 3 inches across.

Cook until golden brown and set. About 3 minutes per side.


Serve with sour cream.
