2 lbs ground beef or veal
2 small onions, finely chopped
1 teaspoon garlic salt
1/2 cup uncooked rice
2 cups of water
3 tablespoons chopped parsley & mint
2 eggs
1 teaspoon of butter or oil
1/2 cup of flour
salt & pepper to taste
Juice from one lemon for sauce

Directions:

Knead the meat, onion, salt, pepper, rice and garlic salt thoroughly. Shape into round balls (size of golf balls) and roll in a little flour. Please note you can use more rice in the meat mixture if you like.

Bring 2 cups of water to boil in a saucepan with a little salt; add meat balls and butter and simmer for about 40 minutes. Half way through boil time you can loosen and turn meatballs over. Try not to break them.

For the Lemon Sauce: Separate the eggs and beat egg whites until they form peaks; fold in yolks which have been beaten separately with lemon juice. Place sauce on stove top on low heat and just heat the sauce until warm. You can add a little cornstarch if the sauce is not thick enough for your taste. Remove cooked meat balls from pan. Shake off any grease and place meat balls into a serving dish then pour lemon sauce on top, sprinkle with chopped parsley and mint. Serve hot.

Also if you prefer more sauce than what the traditional lemon sauce yields, then you can make a lemon cream sauce by using 1/2 cup butter, 4 tablespoons flour, 2 egg yolks, 1 tablespoon of water and juice of 2 lemons.

Youvarlakia was a family favorite at the shore home during the summer. We had this dish frequently during the summer and some of the neighbor kids joined us as they loved it too.
