1 lb. haricots verts (French green beans) steamed lightly & blanched
6 strips of bacon
wood toothpicks


Sauce:
3 T butter
3T white vinegar
t. salt
1 t. paprika
1 T fresh parsely, chopped
1 t. onion juice

Directions:
Directions:
Lightly steam green beans until tender but crisp. Plunge into ice water to stop the cooking. Drain and blot off all moisture.
Divide beans into individual servings, approximately 6. Wrap each with a strip of bacon and affix with a toothpick.

Broil beans on a rack until the bacon is cooked.

Combine all sauce ingredients in a saucepan and simmer until hot. Pour the sauce over the bean bundles when ready to serve.

NOTE: Bundles and sauce can be made ahead and stored. Heat sauce and broil bundles when ready to serve.
