1 hard boiled egg
can undiluted cream of chicken soup
1 T mayonnaise
2 tsp tarragon (or white) vinegar
1 17-oz can "early garden" peas

Directions:
Directions:
Chop egg white and sieve egg yok, keeping separate. Blend soup with mayo and vinegar and heat, stirring until hot. Spoon over heated, drained green peas in serving dish. Top with finely chopped egg whites; concentrated finely chopped egg yolk in center.

Del Monte advertised their "Early Garden Sweet Peas" and this recipe on their cans in the early 1970s. It's a great variation for serving peas (especially frozen peas that retain their dark green color after steaming in a microwave). It is a green vegetable, after all...
