• 4 large Idaho baking potatoes
• 1/3 to ½ cup milk (for some of milk, may substitute sour cream)
• ¼ cup margarine or butter, softened
• ½ teas salt
• Dash pepper

Directions:
Directions:
1. Scrub potatoes; rub with shortening. Pierce potatoes several times with a fork to allow steam to escape.
2. Place on baking pan and bake in 400 degree oven for 1 – 1 ¼ hours, or until soft when squeezed lightly.
3. When baked, cut each potato on in half lengthwise and scoop out inside leaving a thin shell.
4. Mash potatoes until no lumps remain. Can use mixer for this. Add the margarine and beat in 1/3 to ½ cup milk. Beat until smooth and fluffy, adding salt and pepper.
5. Put shells on the baking pan and fill with potatoes. Sprinkle shredded cheese on top. Bake at 400 degrees until cheese melts and potatoes are hot.
