• 2 pounds American cheese
• 2 cups water
• 4 Tbsp minced onion
• 1 can tomatoes
• 2 teas salt
• 1 ½ teas red cayenne pepper
• 1 ½ teas cumin
• ¾ teas pepper
• ¾ teas garlic powder

1. Melt cheese in water in double boiler
2. Add remaining ingredients and simmer 1 hour
3. Add water, if necessary, to maintain desired consistency

Tippy's is a Laurel restaurant that has been around for over 50 years. It is famous for it's Queso that is served with homemade chips. Somewhere along the way Bill got a recipe from a co-worker that claimed to be the actual recipe for Tippy's Queso. The quantity of the ingredients certainly supported this claim. After first making up a full batch of the spices for the recipe and packing them into glass bottles for storage, Bill decided to break down the recipe quantities into something that was more manageable. That is the recipe we've included.
