2 pkgs frozen Fordhook lima beans
1 can diced tomatoes with Italian seasoning
1 mild onion, chopped fine
lb bacon, fried after "chopping" when partially frozen
hot sauce (to taste)
salt & pepper

Directions:
Directions:
Fry bacon pieces (partially freeze bacon and then chop strips into half-inch pieces before frying).
Chop a small onion and saute until soft in same frying pan, mostly drained after frying bacon. Add salt, pepper, and hot sauce to taste.

This recipe is from 2009 and is favored by some who have a hard time enjoying "dark green vegetables..." To expand the recipe, and add to its texture and color, trying adding 1 bag of frozen/steamed corn and some sun dried tomato bruschetta.
