3 cups long-grain white rice
6 cups cold water

Directions:
Directions:
Put the rice in a sieve. Run cold water over it, stirring with a wooden spoon until the water runs clear. Drain. Put rice in a heavy 2-3 quart saucepan. Add 1 1/2 cups cold water. Soak rice for 1 hour. Do not stir. Bring to a boil. Then cover for 10 minutes or until all the water is absorbed. Reduce and simmer for 5 minutes. Remove from heat and let the rice sit in the covered pan for 5 minutes. Remove the lid, and fluff the rice with a fork and serve.

Makes 9 cups.

According to the notes included with this menu, in Japan, it is customary that you finish any rice you take. The legend is that any remaining grain may become a wart on a loved ones face. However, leave a spoonful of rice in your bowl if you want more rice.
