8 oz ground Italian sausage
1 tsp olive oil
5 cloves garlic, pressed
1/2 tsp dried, crushed red pepper
2 10-oz pkg torn fresh spinach
2 15-oz cans cannellini beans, undrained
3 c chicken broth
1/4 c butter, unsalted
1/2 c Parmesan cheese, shredded
2 diced plum tomatoes
2 Tbsp chopped parsley
1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
Brown sausage in oil in Dutch oven over medium heat for 10 minutes, stirring to crumble, until no longer pink. Add garlic, crushed red pepper and saute 2 minutes. Add spinach and saute 2 minutes. Stir in beans. Cook one minute. Add broth and bring to a boil. Add butter cheese, tomato and 1 Tbsp parsley. Cook until thoroughly heated. Stir in salt & pepper.

Ladle into bowls

Sprinkle remaining parsley over each serving.
