3 T unseasoned Rice Vinegar
2 T. fresh Ginger, peeled and finely grated
2 T. Peanut oil (or Avocado oil)
2 T. Asian sesame oil
2 T. Soy Sauce
2 T. Honey
1 T. Fresh Cilantro, chopped
1 Serrano Chili pepper, seeded, minced
White Pepper
1½ # Ahi Tuna, cut into 1 -1¼ inch cubes

Non stick vegetable oil spray
1 Large Red Bell Pepper, cut into 1 inch squares
1 Large sweet onion, cut into 1 inch squares
6 - 12 inch long metal skewers

Whisk first 8 ingredients in medium bowl to blend. Season to taste with ground white pepper. Transfer 3 T. of marinade to small bowl and reserve. Add Tuna to remaining marinade in medium bowl and toss to coat. Refrigerate at least 30 minutes.

Spray grill rack with non stick spray. Prepare barbeque (medium high heat). Alternate tuna cubes, bell pepper, and onion on skewers. Grill to desired doneness, turning frequently, about 4 minutes total for medium rare. Transfer to platter and serve with remaining marinade.

This is an amazing Tuna recipe. We often put the vegetables on separate skewers, because they take longer to cook. Do not over cook the tuna!
