1 cup fresh squeezed orange juice
1/2 - 1 cup of sweetner of choice (I used Monkfruit which I loved the taste when it was first done...however, after a couple of days in the fridge the sweetner began to crystalize in the cranberry sauce...gave it a crunchy texture and looked a little odd but didn't really change the taste. Not sure if a different sweetner would not do that...perhaps liquid stevia? Don't know haven't tried it again!)
1 12oz bag of fresh organic cranberries

Directions:
Directions:
Place cranberries in a pot on the stove, add orange juice and bring to a boil. Reduce to a simmer and allow to simmer until the cranberries burst.

Add the sweetener (I'd recommend adding half and taste...then add more as needed) and stir until fully disolved.

Place strainer over a large bowl and pour the cranberries into the strainer to strain the solids. (or not if you like chunky cranberry sauce!) Use the back of your wooden spoon to press the berries and extract all the liquid yumminess.

Disgard the solids and pour the liquid cranberry sauce in a jar and place in the fridge to setup and gel!

I recommend making your cranberry sauce a day ahead of the big day!
