2 cups almond flour
1 tbsp psyllium husk powder
1 tsp Baking Powder
1 pinch salt
1 tsp inulin
2 tsp dry yeast
2 tbsp warm water
2.5 oz butter melted
4 lg whole eggs

Directions:
Directions:
Preheat your oven to 350F

In a small bowl, add the inulin and yeast, followed by the warm water, mix well and let sit for the yeast to activate for 10 minutes.

In a large mixing bowl, add the almond flour, psyllium, baking powder, and salt. Mix well.

Add the activated yeast to the large bowl along with the melted butter and eggs and mix well.

Once the mixture is combined, pour into a 9x5in loaf pan that has been lined with parchment paper.

Leave your batter to prove for 20 minutes in a warm spot, covered with a tea towel. (i placed mine in my dehydrator!)

Bake in the oven for 30-40 minutes, the bread is cooked when golden brown and makes a hollow sound when tapped.
Remove from the tin and leave to cool on a rack.

Slice the loaf into 16 slices and enjoy straight away or store in the fridge or freezer.

I started with the Keto Bread Recipe - New and Improved from myketokitchen.com (I lowered the butter and eggs quite a bit as the end result was really 'eggy' and so greasy!!)
