1 chicken, cooked, cut up, and then shredded to make smooth consistency (or 4 chicken
breasts)
3-4 stalks celery, chopped fine
1 onion, chopped fine
2 capfuls of white distilled vinegar
2 Splenda or Sweet n Low packets
1 C pecans, chopped fine
Red seedless grapes, optional
Mayonnaise
Salt/pepper to taste

Directions:
Directions:
• Bake a whole chicken at 350º until the leg is tender. I prepare chicken by seasoning with salt and pepper inside and
out, and placing pats of butter on top of chicken.
• Debone chicken after cooled, cut up and shred.
• Mix all other ingredients together, except mayonnaise.
• Begin adding mayonnaise, about 1 cup. Continue to add and mix in until you like the consistency. Add more, if
necessary. (It is always a guessing game for me!)
• Serve on a bed of lettuce, or as a sandwich.
