Cream: 1 cup butter, 2/3 cup sugar
Beat in: 1 egg, 1 teaspoon vanilla
Combine and add: 2 1/2 cups sifted all-purpose flour, 1/2 teaspoon salt
Chill dough 3 to 4 hours before rolling

Preheat oven to 350 degrees

To use as little extra flour as possible — chill the dough at least 1 hour before rolling it, and –use a pasty cloth and rolling pin cover. These practically do away with sticking and require the use of very little additional flour. CUt out shapes with ~2" cutters or a drinking glass for a round cookie. IA round cookie can get a strip of raspberry jam down the center. THen fold up sides and pinch in the middle.

Lightly grease the pan or use parchment paper. Using a pan without a rim makes it easier to get the cookies off the tray, but it is not required.

Filled or plain, bake about 8 minutes. They can brown quickly so watch closely!
