4 T butter
4 small onions, minced
1 tsp salt
1 tsp pepper
6 slices fried/crumbled bacon
1 c. shredded Swiss cheese
2 egg yolks
2 eggs
1½ c. light cream
⅛ tsp nutmeg
1 tsp minced fresh chives
1 unbaked 9" pie crust

Directions:
Directions:
Heat oven to 350º. Fit pie crust into pie dish, crimping edge all around. Melt butter in skillet and add minced onion. Sauté until onions are soft and translucent; add salt/pepper. Drain onions and spread onto the pie crust. Evenly, sprinkle on crumbled bacon, then shredded Swiss cheese. In a bowl, beat together eggs, egg yolks, light cream, nutmeg, and chives. Pour into pie crust. Bake 30 minutes in 350º oven. Let set for about 5 minutes before serving.

Note: The best pre-made pie crust for this is, in my opinion, a Marie Callender pie crust.
