2 pie crusts (option: omit top crust)
1 c. chopped onion
1T butter
1 medium tomato, chopped
1 4oz can sliced black olives, drained
¼ tsp garlic salt
¼ tsp cumin
⅛ tsp pepper
1 4oz can chopped green chille
2 eggs, beaten
1 c. shredded cheddar cheese
1 c. shredded Monterey Jack cheese
sour cream and salsa

Directions:
Directions:
Place 1 pie crust in pie pan. Saute onion in margarine until onions are translucent. Stir in tomatoes, chilies, garlic salt, and cumin. In separate bowl, mix eggs and ½ cup of both cheeses. Spread remaining cheese evenly in pie crust. Add onion mixture. Pour in egg mixture. Option: Top with second pie crust and seal edges. Bake at 375º for 45-55 minutes on lowest oven rack-- until a knife inserted comes out clean.. Top with sour cream and salsa.
