Prime Rib Roast (up to 3.5 kg)
1/4 cup flour
2 tbsp course salt
4 tsp cracked black pepper

Directions:
Directions:
Remove roast from fridge, pat dry, and let stand 1 1/2 hours at room temperature.
Preheat oven to 500F.
In a small bowl mix flour, salt, and pepper. Rub entire roast with rub and place bone side down in roasting pan with rack.
To calculate roast time, every 500 g multiplied by 8. Then turn off oven and leave roast to cook for 2 hours. Check with meat thermometer 155 F for medium. If not done after 2 hours, place back in oven at 350F until done. Transfer onto platter - no resting time is needed. Slice and serve.

Tip: a 3.5 kg roast would cook for 56 minutes (3.5/.5 x 8 = 56). Then it stays in oven for another 2 hours. DO NOT OPEN OVEN DOOR
