8 Fresh ears of corn on the cob
1 15 oz. can Israeli pickles
1 avocado, diced

Dressing:
1 tsp. Dijon Mustard
¼ cup olive oil
Juice from 1 lemon or regular lemon juice
Pinch of dried oregano

Directions:
Directions:
To cook corn:
Bring large pot of water to boil. Place corn in boiling water for 4-5 minutes. Drain water and run cold water over corn. When cool, cur corn off the cob.

To assemble salad:
Whisk dressing ingredients together in a small bowl. Cut up corn, pickles and avocado in bowl and toss with dressing.
