½ c. salted butter - softened
¾ c. dark brown sugar
½ c. granulated sugar
1 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla
2 large eggs
1 (10 oz) pkg. Creme de Menthe Baking Chips
2⅔ c. all purpose flour

Directions:

Beat butter, sugars, baking soda, baking powder, vanilla, and eggs until mixed well. Stir in baking chips, then flour. Wrap in plastic and chill in refrigerator for 1 hour or up to several days.
When ready to bake preheat oven to 350º F. Form dough into about 1 oz. balls using a spoon or cookie scoop, place on parchment lined cookie sheets about 1 inch apart and slightly flatten the balls. Raise oven rack one level above middle and bake 8 to 10 minutes. Allow to cool on pans for two minutes before removing to rack to completely cool.

You can use a combination of Andes Creme de Menthe and Andes Peppermint Crunch chips to add a bit of color (red) and a little stronger mint flavor. I usually squiggle a little melted chocolate on the tops, too.
