Peaches, per quart 1 1/4 lbs

Syrup Proportion

1 cup granulated sugar
2 cups water

Directions:
Immerse peaches in boiling water for 30 seconds to 1 minute. Run under cold water. Peel. Cut in quarters, discard pits. Pack into hot sterilized jars to within 1 inch of top. Pack firmly without bruising fruit. First fill 1 jar of fruit with water. Drain and measure. Multiply the amount by the number of jars and you will know how much syrup to make. Measure sugar and water into saucepan. Heat on medium high stirring occasionally until it boils. 1 batch of yields 2 1/2 cups of syrup. Pour over fruit to within 1/2 inch of top. Secure lids. Process in hot water bath for 25 minutes for quarts, 20 minutes for pints. Makes as many jars as your canner will hold.
