4 large baking potatoes (Russets)
1/4 cup olive oil
Kosher salt

Directions:
Set oven to 425
While the oven is preheating, wash and dry the potatoes.
Prick the potatoes with a fork. Approximately 3-4 times per side.
Rub the potatoes with olive oil and sprinkle liberally with kosher salt.
Place the potatoes on a baking sheet or directly on the middle oven rack.
Bake for approximately 45 minutes depending on size. The potatoes will be soft and yield easily when gently squeezed.
Remove the potatoes, slice open lengthwise, and gently squeeze the ends towards the middle to open the potato.
Top with your favorite toppings.
