4 or 5 medium russet potatoes, peeled and diced
1 medium sweet onion, chopped
2 stalks celery, chopped
3 to 4 slices of bacon
1 to 2 Tbs butter
Whole milk
Salt and Pepper to taste

Directions:
Directions:
Cover diced potatoes in cold water and bring to a boil. Reduce heat and simmer until tender, 10 to 15 minutes. Meanwhile, fry bacon and remove from pan. Saute onion and celery in butter and bacon fat until tender and translucent. Strain the potatoes and add to the onion and celery. Chop the bacon and return it to the vegetables. Salt and pepper to taste. Add milk to cover and heat through, being careful not to boil. Adjust salt and pepper to taste and serve with crackers or cornbread.
