2 Chicken Breasts
Enchilada Sauce
Shredded Cheese
1 dz Corn Tortillas
Vegetable Oil

Directions:

Boil Chicken breasts until done which takes about 30 min
Shred the chicken the easy way by putting it in a large bowl and beat on low with the mixer
Lightly cook the tortillas in the oil for about 30 seconds on each side
Place on a paper towel to drain the oil and cool so that you may handle them later
On a cookie sheet, get a tortilla, fill in the middle with chicken and a little bit of cheese, then roll and place on the sheet seem side down
Finally you pour the enchilada sauce all over the enchiladas and sprinkle with cheese
You can add sliced olives to these too if you'd like
Cook on 350º for about 10 min or until cheese on top is melted

These have always been a family favorite. Kaitlyn absolutely loves these. These make great leftovers too. They are a little labor intensive, but well worth it. You can also take some roast and shred it and make shredded beef enchiladas too. So good.
