1 1/4 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 sticks butter
3/4 cups white sugar
3/4 cups brown sugar
2 eggs
1 tsp pure vanilla extract or grated rind of one orange
3 cups quick or old fashioned uncooked oats
One 12 ounce (2 cups) butterscotch morsels

Preheat oven to 375 degrees. In small bowl, combine four, baking soda, salt, and cinnamon please set aside. In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla extract or orange rind until creamy. Gradually beat in flour mixture. Stir in oats and butterscotch morsels. Drop by measuring tablespoons onto parchment paper on cookie sheets. Bake 7-8 minutes for chewier cookies, 9-10 minutes for crispier cookies. Let stand on cookie sheets for 2 minutes, remove and cool on racks.

These cookies were one of my favorite cookies. My grandma would give these to me in a metal tin. When you opened the tin the smell of butterscotch would flood the room like a scented candle. Try these with coffee or a cup of milk.
