Chicken: 2 breasts or 4 thighs or legs
4 cups of sliced mushrooms, white button, crimping, or a mixture to your taste
½ cup good white wine
1 cup chicken stock
2 T. unsalted butter
2 T. good olive oil
Salt and Pepper to taste

Directions:
Directions:
Heat olive oil in a large oven safe sauce pan and brown the chicken on all sides, about 2 minutes per side.

Add the mushrooms and stir all around the chicken to coat the mushrooms and add a large pinch of salt. The salt will draw out the water in the mushrooms. Once the mushrooms have reduced and gotten some color (not browned) add the wine, cook for a minute or so. Add the chicken stock and move the pan to a 350 degree oven.

Cook until the chicken is done (when juices run clear when poked)

Remove chicken and mushrooms from oven. Plate the chicken. Add cold butter to the mushroom mixture and stir until dissolved and the sauce is silky. Pour over chicken and serve.

If you like chicken and you like mushrooms you will love this dish. It's also easy to prepare and there's never any left.
