3 C canned pitted tart cherries packed in water (This will take 2 cans of cherries.)
¾ C juice from cherries
1 C sugar
2 Tb quick cooking tapioca
10 drops of red food coloring
3-4 drops of almond flavoring
Dash salt
1 TB butter
2 pie crusts

Directions:
Directions:
• Preheat oven to 400°.
• Combine the first 7 ingredients in a mixing bowl and allow to sit for 20 minutes.
• Line a 9 inch pie pan with one pie crust shell.
• Pour the cherry mixture into the pie shell.
• Dot the top with butter.
• Cut the other pie crust into long strips one inch wide.
• Place on top of the cherry mixture, weaving strips to make a lattice top.
• Lightly sprinkle lattice with sugar before baking.
• Bake for 50-55 minutes.
