½ c milk
1 T butter
¼ tsp salt
⅛ tsp pepper
½ c asparagus liquid
1 T flour

Select green asparagus with tightly closed bucks.Wash and snap off lower tough ends of stalks (if not young and tender, peel the stalks). Tie in bunches and stand in rapidly boiling water that has been salted. Cover stalks, with tips out of water. Cook for 5-10 minutes or until stalks are tender. Reserve liquid.

White asparagus stalks must be white at tips (if pink- it will be bitter). Snap off tough ends and peel stalks very thinly, par-boil, drain. Add to salted boiling water, cook until tender. Reserve liquid.

Cook ½ lb. asparagus as described above. Reserve liquid.

Stir constantly till thickens.
Process and puree asparagus very finely. Add milk and process on blend.
