"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
In a large saucepan, add the sugar, evaporated milk, butter, and salt.
Blend and cook over medium heat until reaches a boil. Boil for 5 minutes (set timer)
Remove from heat.
Add the chocolate chips, vanilla and nuts. Stir with wooden spoon (will be sticky) until blended. I leave the marshmallows only partially melted. You can stir until smooth as well
Spread in a greased, 8 X 8 glass baking dish that is lined with parchment paper and sprayed a second time. Chill. Cut into 1 inch pieces. Can be easily given in small gift box lined with parchment paper. Keep refrigerated.

Personal Notes:
Fudge was the thing for me! My grandmother always gave me a full christmas tin of fudge every christmas when no one was looking. You see, she gave each “family” a tin, and then snuck an extra just for me. She also always had it ready for me during my final exams. Whenever I put a piece in my mouth the memories flood back - which is why I always make fudge every Christmas.
