½ C shortening
1 ½ C sugar
2 eggs
1 tsp vanilla
1 tsp butter flavoring
1 ½ oz red food coloring
3 Tb cocoa
2 ½ C flour
1 tsp salt
1 C buttermilk
1 Tb vinegar
1 tsp baking

Frosting:
¼ C flour
½ tsp salt
1 C milk
1 C shortening
1 ½ C sugar
1 tsp vanilla
¼ tsp butter flavoring

Directions:
Directions:
• Preheat oven to 350°.
• Cream shortening, sugar, eggs, and flavorings.
• In glass bowl, make paste of cocoa and food coloring.
• Add to 1st mixture.
• Alternately add flour and salt with buttermilk.
• In a small bowl, mix soda and vinegar and add to batter.
• Pour batter into 2 (9”) cake pans.
• Bake for 20-25 minutes.
• Let cool completely before frosting.


To prepare frosting:

• On medium heat, cook milk, flour and salt till thick, stirring constantly.
• Allow to cool completely. You may put in the refrigerator to cool, but the mixture cannot be warm at all.
• Cream the shortening with the sugar.
• Add flavorings.
• Combine the cooled mixture with the shortening mixture and beat well. Frost cake.

Red velvet cake was served at the Christmas wedding of Rick and myself. Moopy made it and cut it into triangles so it could be placed inside the back of the mock cake. In doing so, guests saw a beautiful cake on the table no matter if they were the first or the last to go through the line.
