1/2 cup canola oil
1 cup sugar
2 beaten whole eggs
3 large VERY ripe bananas (mashed with potato masher)
2 cups white all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. table salt
3 Tbls. whole milk
1 tsp. real vanilla extract. (I changed this from 1/2 tsp. from her original recipe)
1 cup chopped walnuts (I changed this from 1/2 cup from her original recipe). (Nuts optional)
4-small nonstick loaf pans - sprayed with nonstick spray.

Preheat oven to 350 degrees.
Beat together oil and sugar (Kitchenaid mixer or by hand) Add the eggs and bananas and mix well.
Sift the flour, baking soda, baking powder, and salt. Add to first mixture with the milk and vanilla.
Mix well (but do not over mix). Add the nuts and mix just to blend.

Pour evenly in the loaf pans. Bake for 25 minutes and then check with toothpick. If comes out clean in the middle of a loaf then done, if not set another timer for 5 minutes and keep checking in 5 minute intervals. My oven is done after 32 minutes.

Your great grandmother Bertha Helene Henderson (she hated the name Bertha so she went by B. Helene Gorski - her husband called her Bert!) , originally from Iowa, married Walter Anthony Gorski (aka Wally with the initials WAG - a huge dog lover like me) and moved to Minneapolis, Minnesota. She worked at the IDS tower as an insurance clerk in Minneapolis (I showed it to you when we went there for volleyball) until she was 70 years old. An office job back then was a big deal, especially for a small town farm girl. She believed in spreading the love for holidays and birthdays. She had a quilted tote bag that she would fill with homemade treats to give to her friends, neighbors, family, and co-workers all year round. This recipe was originally baked in soup cans so they were easy to transport and to cut between the ridges. She would freeze large batches so treats were always available. She had a freezer that was HUGE in the basement that I grabbed treats from frequently. During college, her house was my home away from home. She would send back a big box of homemade treats and savory dishes (like her famous split pea soup) so I always felt her love. I promised her that I would continue the tradition when she gave me my first handwritten cookbook. I cannot tell you the joy I have received from baking for others. It is the unexpected that can make a person smile. Please continue the tradition.....anything sweet from my grandma has been shared with my friends and family my entire adult life. Also, please make sure my future grand kids and great grand kids continue the tradition, even if it is just one recipe. Keep her memory alive. She loved you dearly. I was so blessed that she lived long enough to meet both of you.
