1 boneless pork butt (about 4 pounds)
corn tortillas

1 medium onion, chopped
1/2 cup chicken stock or broth
1/3 cup++ frozen orange juice concentrate
5+ garlic cloves chopped or minced
2++ chipotle chiles in adobo sauce plus 2+ tsp sauce (this is THE most important ingredient!)
2 Tbsp apple cider vinegar
1+ Tbsp tomato paste
1 and 1/2 teaspoons salt
1+ tsp Mexican (or regular) dried oregano
1/4 tsp cinnamon
black pepper

Garnish with: cilantro, spring onions, lime wedges.

In a blendor or food processor, puree all.

Put pork butt in slow cooker and pour seasoning mixture over. Cook on HIGH for about 8 hours or until pork shreds easily with a fork.
