1 cup skim or low fat milk
vegetable oil spray
1 tsp salt
4 orange-roughy fillets (1 1/4 lbs) or haddock, cod or scrod, washed and dry
2/3 cup dried bread crumbs
1/4 cup Parmesan cheese
1/4 tsp ground thyme or crumbled.dried thyme leaves

Preheat the oven to 450. Spray a baking dish with vegetable oil spray. In a shallow bowl or pie plate combine the milk and salt. Add the fillets and coat them well. In a second shallow bowl or pie plate, combine the bread crumbs, Parmesan cheese and thyme. Remove the fillets one at a time from the milk and dip them into the crumb mixture, coating them thoroughly. Place the breaded fillets in a prepared baking dish. Place the pan in the middle of the oven and bake the fillets 12 minutes or until they are just baked through. Remove from oven and serve.
