1/2 cup olive oil
2 medium yellow onions, chopped
2 ribs celery, finely diced
1/2 green bell pepper, finely chopped
1 (15 oz) can tomatoes, chopped
2 Tblsp tomato paste
4 cloves garlic, minced
1/4 tsp white pepper
1/8 tsp cayenne pepper
1/4 tsp ground thyme
salt to taste
1/2 lb chicken breast, boiled and cubed
2 lbs shrimp, boiled, peeled and chopped
4 cups cooked rice
1/2 cup finely chopped parsley

Directions:
Directions:
In large pan, saute in olive oil the onions, celery, and bell peppers until tender, about 5 minutes. Add the tomatoes, tomato paste and garlic. Season with white pepper, cayenne pepper and thyme; salt to taste. Simmer over low heat 15 minutes. Stir in ham, chicken and shrimp. Cook 5 minutes. Add the rice and parsley and stir while cooking 10 more minutes.
