4 lbs coarse ground/chili grind, beef chuck
1 lb onions, coarsely chopped
1 clove garlic, put through garlic press
1 cup boiling water
1 7 oz can tomato paste
3 oz chili powder
3/4 tsp cumin seed, ground
5 oz flour
salt to taste

Directions:
Place meat, onions, and garlic in heavy pot and cook over medium heat until onions are transparent. For grease-free chili, remove from heat and strain juices into another pan. Cool until grease layer can be peeled off and discarded. Recombine juice and meat with 1 cup boiling water. Add tomato paste, chili powder and cumin. Simmer 2 hours , stirring occasionally.

While this is cooking, sift flour into shallow pan and place in preheated 350 degree oven. Stir about every 20 minutes until golden brown. This should take about 1-1/2 hours. When chili has cooked 2 hours, add parched flour and sufficient boiling water to bring to desired consistency. Add salt to taste. Cook 2 more hours, stirring occasionally and adding boiling water to maintain consistency desired.
