1 bag dried pinto beans
Salt
6 slices bacon, cooked crisp (need grease, too)
1 ½ cups grated sharp cheddar cheese
Sour cream
Salsa
Tortilla chips

Directions:
Directions:
Rinse beans thoroughly. Place in crock pot, add enough water to go about 1 inch above beans. Cook on high for about 4 hours, checking often to make sure there is sufficient water. Stir occasionally. Cook until beans crack and are soft. Drain juice and reserve to add back later. Pour beans back into crock pot and mash (recommend an immersion blender or hand mixer for best results and to obtain a smooth texture).

Cook bacon in oven (400ºF) so that the grease can be added to the beans. Cook until crisp, about 7 minutes per side. Crumble or chop cooked bacon into small pieces. Add the grease and bacon to the mashed bean mixture, mix. Add 1 cup of the grated cheese, mix. Add salt to taste.

Serve with extra cheese, salsa, sour cream, and chips. Enjoy!
