12 cups of sliced Zucchini
1 Green Pepper
1 Red Pepper
4 cups of Yellow Onion


5 Tablespoons of corn starch
5 cups of White Sugar
2 cups of Apple Cider Vinegar
teaspoon of Nutmeg
teaspoon of Turmeric
teaspoon of Celery Seed
teaspoon of Dry Mustard

Directions:
Directions:
Grind the first 4 ingredients together in a food processor. Add 5 Tablespoons of salt and let stand overnight. Rinse thoroughly in a colander.


Add the next 7 ingredients together with the Zucchini, onions, and peppers and bring to a boil. Let this simmer for 20 minutes. Stirring occasionally to keep from sticking. Put in jars and seal. Place in water bath for 10 minutes. Remove and let sit for 12 hours undisturbed. This recipe makes approximately 5 pints or 10-12 small jam jars.

This is delicious relish that you can use for many different purposes. It's very good to put in baked beans, potato salad, use as hot dog relish, topping for a burger or just spreading on a cracker. This recipe came from my mother Joan Bennett.
