1/2 to 1 potato baking potato per person
Milk
Butter
Grated cheddar cheese
Bacon cooked crisp and crumbled (2 slices per potato)
Chives
Garlic powder
salt/pepper

Directions:
Directions:
Clean potatoes and prick with a knife or fork. Cook at 400ºF for about an hour or until fully cooked. While still hot, cut potato in half lengthwise. Empty contents of potato into a bowl, leaving the skin intact. Add butter and mash potato. Add grated cheese, garlic powder, salt, and pepper to taste. Add chives and bacon. Add milk to provide a consistency of a little looser than mashed potatoes. Fill the potato shells with mashed mixture. Place in small broiling pan and top with more grated cheese. Bake at 400ºF for 20-30 minutes or until cheese is melted and browned to desired amount. May finished under the broiler if you want the cheese more brown.

Variations:
- Substitute finely chopped raw broccoli for chives
- Add sliced mushrooms
- Other spices I've added: smoked salt, Mrs. Dash, garlic salt
- Use other cheeses in addition to cheddar
