*Makes 2 Pies*

2 1/2-3 lbs Sweet Potatoes
1 1/2 cups sugar
3 eggs
1 stick butter
1/4 evaporated milk (can use regular milk)
little salt: 2-3 good shakes
1-2 tsp vanilla

Directions:
Directions:
Peel and slice potatoes. Put in pot, cover with water and cook until tender

Drain off water, add butter, beat.
Then add sugar-mix well.
Add eggs. beat well.
Add that little bit of salt, vanilla-add a little milk if needed.

Pour into uncooked pie crusts and bake 375-400 until done (I guess 20-25 minutes)

Tip: Turn a cook sheet upside down in oven as it preheats, then place pies on top so crust cooks completely.

I love this recipe. Not only because Zack and I LOVE her sweet potato pie, but because I remember sitting with her when she gave me this recipe and she wrote it down exactly as she said it to me-that is how I included it here. Can't you just hear her talking to you?
