Peel and cube potatoes. If preferred, leave the skin on the potatoes. Dice half an onion. Put 2 layers of aluminum foil on a flat surface. Smear butter on the top layer of the foil to within 2 inches of the edges. Place the potatoes and onion on the buttered portion of the foil. Dot the top of the potatoes with additional butter. Salt and pepper generously. Put 2 more layers the same size (or a little longer) of foil on a flat surface and smear butter on the top layer to within 2 inches of the edges. Put those layers, butter side down on top of the potatoes. Match up the edges of all the foil and seal the potatoes by rolling and crimping the edges of foil very well. Place the foil package on a hot grill. After 20 minutes carefully flip the foil package over careful not to puncture the foil. (If you do, it won't ruin the dish.) Cook for 20 more minutes. At some point the foil package will fill with steam. Remove from grill and place the package in a baking dish. Tear open the top layers of foil and serve. You may add additional ingredients to the potatoes as desired. This would also work for other mixtures of vegetables.
