1 stick butter
2 medium onions chopped
1 package crimini (baby bella) mushrooms, quartered
1 package white mushrooms, quartered (could do 2 packages)
1 teaspoon dried thyme
1 cup cognac
2 tablespoons all purpose flour
4 cups chicken broth
1 tsp beef bouillon
1 cup cream!

Directions:
Directions:
Melt butter in large pot over medium-high heat. Add onions; sauté until golden, about 5 minutes. Add all mushrooms and thyme; sauté until mushrooms begin to brown, about 8 minutes. Add cognac; stir 30 seconds, then mix in flour. Slowly stir in broth and bouillon; bring soup to boil. Reduce heat; stir in cream; simmer uncovered 10 minutes. Puree chunky with hand blender. Season with salt and pepper. Ladle into bowls.
