Buttermilk:

2 cup milk
2 tablespoon lemon juice

Pancakes:

2 eggs
2 cups buttermilk (see above)
cup oil
1 teaspoon vanilla
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Buttermilk:

In large bowl mix milk and lemon juice. Stir together, let sit for 5-10 minutes.

Pancakes:

Add eggs, oil and vanilla to buttermilk, mix well.

Add 1 cup flour, sugar, baking powder, baking soda and salt. Mix well. Add remaining flour. Mix until lumps disappear.

Heat lightly grease skillet over medium heat. Pour about -cup of batter onto hot skillet. Cook until bubbles form and then flip and cook for 2-3 additional minutes.


Hint:

If adding fruit, do so when pancakes are first poured into skillet.
